Why study it:

The University of Agriculture in Krakow (URK) offers Food Engineering as full-time Master's studies in English at the Faculty of Food Technology, in the discipline of nutrition and food technology. The programme is aimed at engineers who want to design and manage food production on an industrial scale and move into engineering or managerial roles in the food industry.

Programme: processing technologies, engineering and management

Compulsory courses cover modern technologies of processing animal products, carbohydrates and plants, food engineering, process control, computational methods in food engineering, basics of programming, physical chemistry, statistics and experiment design and nutrigenomics. Food law, fundamentals of entrepreneurship and communication in management add the legal and business side.

Optional courses let you go further in directions such as fermentation technology and industrial microbiology, applied and industrial enzymology, bioreactor engineering, food nanotechnology, new packaging materials, sensory and physicochemical food analysis or nutrition and health.

Languages: taught in English by researchers

The whole programme is taught in English by academic staff who each hold at least a PhD, and some classes may be led by foreign visiting professors.

After graduation: engineer or manager in the food industry

You learn to design technological lines, select equipment, calculate production costs and control processes with computer tools. Graduates can work:

  • as engineers and managers in all types of food production plants
  • in plants preparing functional food additives
  • in companies designing and building equipment for the food industry
  • in units dealing with food storage and distribution
  • in research – the studies prepare you for a PhD – or in their own business

Did you know? Among the optional courses is functional and regional cuisine, together with modern methods and trends in gastronomy.

As of the 2026/27 admissions, based on the programme page at urk.edu.pl.

⇑Definitions and quotes

Engineering
Engineering is the creative application of science, mathematical methods, and empirical evidence to the innovation, design, construction, operation and maintenance of structures, machines, materials, devices, systems, processes, and organizations. The discipline of engineering encompasses a broad range of more specialized fields of engineering, each with a more specific emphasis on particular areas of applied mathematics, applied science, and types of application. See glossary of engineering.
Food
Food is any substance consumed to provide nutritional support for an organism. It is usually of plant or animal origin, and contains essential nutrients, such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth.
Food Engineering
Food engineering is a multidisciplinary field which combines microbiology, applied physical sciences, chemistry and engineering for food and related industries. Food engineering includes, but is not limited to, the application of agricultural engineering, mechanical engineering and chemical engineering principles to food materials. Food engineers provide the technological knowledge transfer essential to the cost-effective production and commercialization of food products and services. Physics, chemistry, and mathematics are fundamental to understanding and engineering products and operations in the food industry.
Food
Naturalists and egalitarians don’t believe the rosy predictions about how genetically enhanced food will end famine. Starving people are hungry not because of high population density but inequality in food distribution… Similarly geni-modified food is neither the best nor the only way to feed starving people.
Peter Rosett, in “World Hunger:Tweleve Myths” in Designer Food: Mutant Harvest Or Breadbasket of the World?, (2002), quoted by Gregory E. Pence, p. 149
Engineering
Engineering is the conscious application of science to the problem of economic production.
Halbert Powers Gillette (1910). cited in: T.J. Hoover & J.C. Lounsbury Fish. The Engineering Profession. Stanford University Press, 1941. p. 463
Engineering
These experiences are not 'religious' in the ordinary sense. They are natural, and can be studied naturally. They are not 'ineffable' in the sense the sense of incommunicable by language. Maslow also came to believe that they are far commoner than one might expect, that many people tend to suppress them, to ignore them, and certain people seem actually afraid of them, as if they were somehow feminine, illogical, dangerous. 'One sees such attitudes more often in engineers, in mathematicians, in analytic philosophers, in book keepers and accountants, and generally in obsessional people'.
The peak experience tends to be a kind of bubbling-over of delight, a moment of pure happiness. 'For instance, a young mother scurrying around her kitchen and getting breakfast for her husband and young children. The sun was streaming in, the children clean and nicely dressed, were chattering as they ate. The husband was casually playing with the children: but as she looked at them she was suddenly so overwhelmed with their beauty and her great love for them, and her feeling of good fortune, that she went into a peak experience . . .
